This is our family's favorite bread recipe because it's simple, light, and delicious! We love serving them at special dinners, but they're just as delicious enjoyed as a quick snack with honey or sliced in half for sandwiches.
Ingredients
- 1½ cups (360 g) warm water
- ⅓ cup (72 g) extra virgin olive oil
- ⅓ cup (113 g) honey
- 1 large egg (50 g, without shell)
- 4¾ cups (570 g) heritage Turkey Red wheat flour
- 2 tsp. (12 g) salt
- 1 Tbsp. (9 g) instant yeast
Directions
- In a large mixing bowl, combine the warm water, egg, and flour until no dry flour remains.
- Cover and let rest for 20–30 minutes. This gives the fresh-milled whole wheat flour time to fully hydrate, helping create softer, lighter rolls.
- Add the honey, olive oil, salt, and instant yeast. Knead with a dough hook for 6–8 minutes, until the dough is smooth and elastic. The dough will be soft and slightly tacky.
- Cover and let the dough rise until doubled, about 60–90 minutes.
- Divide the dough into 16–20 equal pieces and shape into smooth rolls.
- Place the rolls about 2 inches apart on a parchment-lined baking sheet or in a lightly greased baking pan.
- Cover and let rise again until puffy, about 30–45 minutes.
- Bake at 375°F for 12–14 minutes, or until lightly golden.
- Cool slightly before serving.
Tip
These rolls freeze beautifully. Bake a full batch, cool completely, and freeze. Pull out however many you need and warm in the microwave or oven at 300° for about 10 minutes — they taste fresh-baked every time.
