There are two ways to mill wheat. One is fast, cheap, and strips the grain of most of what makes it nourishing. The other is slow, traditional, and keeps the whole grain intact.
We chose the harder one — Barre Gray granite millstones that grind cool and slow, so the vitamins, minerals, and natural oils in the germ survive all the way to your kitchen.
Industrial roller mills generate heat that oxidizes the germ before the bag is even sealed. Our flour doesn’t have that problem. What comes out of the mill goes into your bag.

When Mennonite immigrants settled central Kansas in 1874, they brought Turkey Red wheat with them — hardy, resilient, and deeply nourishing. This heritage grain transformed the Great Plains into America’s breadbasket.
Turkey Red wasn’t bred for warehouses or supply chains. It was bred for flavor, resilience, and real nourishment. We grow that same grain — not a hybrid, not a modern variety — right here in Hillsboro, on the same Kansas soil those original families farmed.
