Our story

A heritage grain with deep Kansas roots

Turkey Red wheat arrived in Kansas with Mennonite settlers in the 1870s. It thrived in the hard winters of the Great Plains, fed the region for generations, and then largely disappeared when commodity agriculture took over. We’re bringing it back.

At Janzen Milling, we grow Turkey Red wheat regeneratively on our farm outside Hillsboro — no glyphosate, no shortcuts. When it’s ready, we stone-grind it fresh and ship it directly to your kitchen.

This is real flour from a real farm. You can taste the difference.

The flour

Why fresh-milled flour tastes different

Most flour sitting on a grocery store shelf was milled months ago. The bran and germ — where most of the flavor and nutrition live — are either removed entirely or have long since gone stale. What remains is shelf-stable, but flat.

Fresh-milled flour is different. The whole grain is stone-ground just before it ships, so you get the full spectrum of flavor: warm, nutty, slightly sweet. Baking with it produces bread, pancakes, and cookies with a depth of character that commodity flour simply cannot match.

We mill to order. That means the flour in your bag was ground within days of landing on your doorstep.
